Our Philosophy
At Kauai Cuisine we combine fresh, local ingredients,
years of culinary expertise, and a tremendous passion
for food. Our mission is to utilize these three things
to create a unique and exciting dining experience. We
aim for perfection. We hope that while striving towards
that goal, we will create culinary magic.
On the tiny island of Kauai, with a population of only
55,000 people, many different cultures
influence the food. The most obvious is the Hawaiian
influence, especially in the ingredients available to
us, and the traditional way of preparing them. In addition
to that, there are a myriad of others, stemming from
the great influx of people that have found their way
to our small piece of paradise. We use this to our advantage.
Our cuisine is a culmination of different influences,
with a basis in local Hawaiian ingredients and classic
French cooking techniques.
The foundation for fine cuisine is rooted in the ingredients;
sophisticated cooking techniques and creativity serve
as enrichments. We are committed to using only the best
possible ingredients. Not limited to luxury products,
but, more importantly, foods at the height of their
flavor: taro just out of the ground, mangoes right off
the tree, line-caught fish from the sea. If you start
with the finest, freshest, purest-tasting ingredients,
it is hard to go wrong. Our broad base of culinary knowledge
and mastery of techniques will serve to enhance the
high quality of our ingredients. We believe purity is
the best approach to creating a great dish.
Food is not enjoyed just by the palette, but by all
the senses. First, it is praised by the eyes, by the
vibrant colors and presentation the chef has created;
then as one smells the delightful myriad of aromas;
and, of course, the taste on the palette as the first
bite is savored. A great dining experience is on a par
with great music. Great meals, like great music, have
a rhythm and harmony all their own. Each bite should
flow into the next seamlessly; and when finished with
the course, the diner should yearn for just one more
taste, wishing it weren’t already finished. In
the same vein, each course of a meal should ease fluidly
into the next without interruption. It takes an artist
to achieve this.
Cooking is believed by many to be an art form; a superb
dish created by a great chef being no less magnificent
than Mozart playing the piano. As Docteur Edouard de
Pomiane stated, “Art, after all, is nothing but
the cause and effect of attuning the sense, whether
sight, hearing, or touch. Why then, refuse taste its
place in the genesis and triumph of art?” All
artists have passion. At Kauai Cuisine, our passion
is food, and we want to bring that to our clients through
the dishes we create.
